Wanna know a secret. I don’t like cauliflower. I would go as far to say that I hate it, but my mom taught me that ‘hate’ is a very strong word and should only be used in certain situations, so I think saying I hate a vegetable is a little harsh…but it’s true. Anyway… I struggled as a kid liking any veggies really. It wasn’t until my adult years where I found you could cover anything in curry and it tastes pretty great. That’s what it took for me to start realizing I could like veggies. My daughter struggles with liking them now, and I am ok with it because I know there will come a day she finds a way to appreciate them too.
Eating keto has really helped me find ways to cook and eat vegetables and actually like them. Often, I roast them with a little oil and garlic powder and call it good. When we started eating low carb I did a ton of research about the foods we could eat and the substitutions I could start making.
I will NEVER make cauliflower mash…or so I thought
When I saw people used cauliflower in place of potatoes I was legit shook. I could not IMAGINE doing that. I told my husband that I would NEVER use cauliflower as a replacement for potatoes, I would just live without having mash and that was that.
Then one night I was making keto fried chicken. Growing up, we always had mashed potatoes with our fried chicken. So… with an immense amount of false hope, I tried a recipe for cauliflower mash. You guys… it was SOOOOO GOOD. I was in absolute shock. Baffled really. I felt like a new door had completely opened to my possibilities!
So here I am, sharing my recipe for Cauliflower Mash Keto style. I hope you give it a shot and like it as much as we do. Nothing will ever replace potatoes, but this is a great substitution, I still can’t believe I can say that and mean it.

Cauliflower Mash Keto
This Cauliflower Mash Keto is a garlicky, buttery miracle. Trust me, you'll be just as surprised as I was that this is actually a yummy substitution for mashed potatoes.
Ingredients
- 1 Head Cauliflower - core removed and chopped into smaller pieces
- 1 tbsp butter
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tsp garlic powder
- 1/4 cup heavy whipping cream
Instructions

Cut the cauliflower in half.

Remove the stem, core, and leaves from your cauliflower.

Chop the cauliflower (florets) into smaller pieces.

Bring water to a boil and steam the florets for 20-25 minutes until they are soft and fall off a fork with ease.

Once cauliflower is cooked, drain the water.

Pour steamed florets into a mixing bowl.

Add butter and spices. Mash together with a fork or potato masher.

Add the heavy whipping cream and use an immersion blender to smooth the mash. I personally like to leave a few chunks for texture but you can blend it as smooth as you'd like.

Serve warm with more butter on top.
